Turkey, Spinach & Caramelized Onion Breakfast Sausage
When it comes to breakfast, I have always shied away from sausage. I love the taste of it, but find that any store bought sausage is always packed with additives.

Turkey, Spinach & Onion Breakfast Sausage
It turns out that breakfast sausage is incredibly easy to make at home. I like making a big batch of these Paleo Breakfast Sausage to have for breakfast throughout the week, they are a great grab and go meal to eat as you are rushing out the door each morning.

I like to keep a bag of these sausages in my freezer and quickly microwave a few for breakfast or even lunch when I am in need of some protein. You can also crumble up the sausage and put it in a frittata or omelet.

Turkey, Spinach & Onion Breakfast Sausage
Unlike my simple Pork & Apple Breakfast Sausage, these Paleo Breakfast Sausages have a few added ingredients including caramelized onions, which provides a bit of sweetness, and sautéed spinach. I think that ground cloves and sage are the two ingredients that transform the flavour of the patties from a hamburger to a breakfast sausage.

If you don’t have turkey, feel free to use ground pork, chicken, or a combination of the three instead.

These are SO good, even better than I thought they would be when I read “carmelized onions”! I absolutely love the spice combo. I just don’t do too well with spicy things, so I cut the black pepper and chili pepper flakes. I also forgot to add the salt, and then I cooked them in coconut oil instead of olive, in a cast iron pan. Sooo delicious and I can’t wait to enjoy them for breakfast or anytime!

Yay! So happy to hear they were a hit!

These are delicious! They’ve become my go-to breakfast. The caramelized  onion really makes the dish. I use ground turkey breast and make this as a sausage crumble vs the patties. (I’ve made it so many times I just started getting too lazy to make the patties). Still delicious. After step 1, I had the turkey and spices to the pan with the onion and spinach. Thanks for the recipe! It’s a keeper

These are delicious!  I didn’t have cloves so I had to leave that spice out, but they still tasted absolutely amazing!  I foresee these being a staple in our house from now on.  Thanks for sharing this recipe!

These look great! When freezing do you cook them and then freeze them? Or do you freeze them raw? Also, how do you cook/reheat them after freezing?

    1. Every Last Bite says:

Thanks Rebecca! I freeze them cooked and then to reheat you can reheat them on the stove top or in the microwave.

  6. Liana says:

Looks great! Is the thyme measurement for dried or fresh? Thanks!

    1. Every Last Bite says:

Great question! The measurement is for dried so if using fresh you should use 1 1/2tsp 🙂
